How To Cook Thai Standard Sticky Rice With Vietnamese Flavor

Siamese sticky rice appeared for the first time in Western Vietnam and has become a unique culinary feature of Chau Doc, An Giang. Like other types of sticky rice, Siamese sticky rice is also a type of white sticky rice cooked from glutinous rice and coconut milk. But the special feature of Siamese sticky rice is that it is covered with a layer of juice made from eggs, sugar, coconut milk and flour. In some places, people also add green beans, pandan leaves or durian to increase the aroma and fatness of the dish.

– 600g sticky rice

– 2 pieces of durian

– Cornstarch, condensed milk

How to make Thai Siamese sticky rice

Step 1: Cook sticky rice

To cook delicious sticky rice, you put the sticky rice in water and soak it overnight, then drain it. Next, you mix a little salt into the sticky rice, then add the sticky rice and enough water to the pot and cook.

– In the meantime, you put the grated coconut in the bowl, add warm water, knead and squeeze the coconut milk. Next, you put the flesh of 1 durian with 2 tablespoons of sugar in a bowl and mix well. When the sticky rice is just cooked, add about 100ml of coconut milk and durian, mix well. Cook for about 3 more minutes, then put the sticky rice on a plate or put it in a mold to create a beautiful shape.

Step 2: Cook the sauce

You put the eggs in the bowl, beat the eggs. Then add 2 tablespoons of cornstarch, 2 tablespoons of condensed milk, 2 tablespoons of sugar, 1 drop of yellow food color, beat well for the ingredients to blend. You also put the remaining durian pulp and sugar in a bowl and puree it and then add it to the above mixture. Finally, you add the spoon of cornstarch, the remaining coconut milk into the mixture and beat well.

Step 3: Done

Put the cream mixture into the pot and cook while stirring until the cream comes to a boil, the consistency is moderate and smooth, then turn off the heat.

– 50g of flour

– 30g cornstarch

How to cook Siamese pandan sticky rice

Step 1: Cook sticky rice

Glutinous rice is washed, soaked for at least 8 hours or preferably overnight. Next, you put glutinous rice in a pot with water, cook. When the sticky rice is just cooked, pour in coconut milk and then put the sticky rice in the mold, only half of the mold and then press firmly.

Step 2: Cook pandan leaves

Pineapple leaves in half, you wash and cut into pieces, put in a blender with water and puree. Then, you filter the pandan leaves through a sieve to get the water, remove the body. The other half you wash, then put in a pot to boil with sugar. Cook until the sugar is completely dissolved, then turn off the heat and let it cool.

Step 3: Cook the sauce

Put 4 eggs in a bowl, beat. In a bowl, slowly stir in the flour, cornstarch and sugar water to cool. Then, add the eggs to the flour mixture, stirring well. Add 200ml of coconut milk and 3 tablespoons of pandan leaf juice, mix well. Sieve through a sieve to make the mixture smoother. Finally, you put the sauce in a pot, put it on the stove to cook with low heat, stir well with your hands when the mixture thickens, then turn off the heat.

Step 4: Done

You put the sauce into the other half of the mold containing the sticky rice. Then take it to steam for 20 minutes to finish. When eating, you cut into pieces and can enjoy immediately.
