Tuna vermicelli is a dish that is quite familiar to Central people. The broth is sweet, mixed with the chewy fresh fish meat, making the dish more attractive. - 1kg tuna
- 5 tomatoes

How to cook delicious and simple tuna noodles
Preliminary processing of fish
Tuna after buying, remove gills, intestines, remove fins, cut into slices about 2cm thick, wash.
Put 2 liters of water in a bowl with 2 tablespoons of salt, stir until the salt dissolves. Drop the fish in and soak for 20 minutes.
After soaking for 20 minutes, rinse 2 times with water, let it dry.
Prepare other ingredients
Pineapple washed, cut into small slices about 1cm thick.
Wash tomatoes, cut areca.
Lemongrass washed, smashed, cut into pieces about 5cm long.
Garlic, red onion, peeled, chopped.
Compressed tubers, crushed turmeric, chopped.
Scallions, cilantro washed, chopped. Set aside the cilantro root.
Fresh noodles are soaked in boiling water.
Lettuce, cabbage, washed, drained, and shredded.
Marinate fish with 1 tablespoon salt, ½ number of minced shallots, ½ of garlic, ½ of compressed bulbs, ½ of minced turmeric, 2 tablespoons of fish sauce, 1/3 teaspoon of MSG, ½ teaspoon of pepper. Spread the spice mixture evenly on each piece of fish to absorb, let marinate for 20 minutes.
Sauteed tomatoes, fragrant
Put the pan on the stove, add 2 tablespoons of oil. When the oil is hot, add the remaining minced shallots and minced garlic. Next, you add 1 tablespoon of cashew oil along with lemongrass. Next, add tomatoes, fragrant and stir-fry for about 2 minutes, turn off the heat.
Put the pan on the stove, add 4 tablespoons of oil. When the oil is hot, add the rest of the compressed bulbs, garlic and turmeric to the pan. Next, you put the fish in the pan for about 1 minute on each side.
Bring about 4.5 liters of water to a boil. Next, the mixture of tomatoes, pineapple, fish, cilantro root along with 2 tablespoons of fish sauce, 2 tablespoons of salt, 2 tablespoons of seasoning, 2 tablespoons of rock sugar, ½ teaspoon of monosodium glutamate, heat on. low heat for about 30 minutes. You also put in the pot a few crushed bulbs to make the broth fragrant. During the cooking process, remember to regularly skim off the foam to make the broth clearer.
After boiling for 30 minutes, you taste again according to your taste and then continue to cook for about 10 more minutes, then turn off the stove.
Make a dipping sauce
Puree 3 dangerous chili peppers with 2 cloves of garlic, 1 teaspoon of sugar. Then, you pour in 3 tablespoons of fish sauce and 1 teaspoon of lemon juice, stir well.

Present and enjoy
Put the vermicelli in a bowl with the right amount, add broth, fish, pineapple, tomato, scallions, cilantro, sprinkle on a little ground pepper, serve with fish sauce made on top of lettuce and cabbage.
Some notes when cooking tuna noodles
