Rolled noodle soup was created in the early 2000s by Mrs. Vu Thi Chinh, who lives on Mac Dinh Chi Street, Ngu Xa, Hanoi. With its delicious taste, this dish gradually became a famous dish of Ha Thanh.
How to make beef noodle soup
- 500g noodle soup (uncut)
- 200g filet mignon
- 1 garlic, lettuce
- Lang basil (can be replaced with basil, herbs)
- Coriander Ta (Coriander)
- Spices: fish sauce, seasoning seeds, monosodium glutamate, pepper.
Garlic is peeled, pounded, squeezed to separate the water, and the carcass of garlic is kept separately. Beef washed, drained, sliced thin, across the grain, large. Then, marinate the beef with 1 teaspoon of seasoning, 1 teaspoon of pepper, 1 teaspoon of MSG, 2 teaspoons of fish sauce, stir well. Continue to add garlic juice, 1 tablespoon of cooking oil, mix well for the meat to absorb the seasoning. Marinate beef with cooking oil to make the meat more beautiful.
Put the pan on the stove, add 4 tablespoons of oil. When the oil is hot, add the garlic carcass and fry until fragrant and golden. Then pour in the beef and stir-fry over high heat until just cooked. Do not overcook the meat as it will be tough.
Cut pho into pieces of size 25x12cm. Lettuce, herbs, coriander, wash and dry. Put 1 lettuce leaf, 1 little herbs, 1 coriander, then beef on the noodle and roll tightly. Note, you should arrange the ingredients evenly so that the two ends of the roll do not shrink. Do this until all the ingredients are gone.

How to make pork noodle rolls
- 400g lean shoulder meat
- 500g noodle soup
- 2 cucumbers
- 1 carrot
- Seasoning: garlic powder, chili powder, pepper, soy sauce
Lean pork shoulder washed, drained, cut into long strands about 1.5cm thick. Then marinate the meat with ½ teaspoon of garlic powder, ½ teaspoon of chili powder, ½ teaspoon of pepper, 1 tablespoon of soy sauce, mix well for the meat to absorb the spices, leave to marinate for about 30 minutes. How to make mixed noodle soup
- 100g beef
- 1 teaspoon onion juice
- 1 teaspoon lemongrass juice
- 50g carrots
- 50g onion
- 50g bean sprouts
- Phở noodles
- Seasoning: salt, pepper
Beef washed, drained, cut into pieces about 0.5cm thick, beat the meat with the handle of a knife until thin. Marinate the meat with purple onion juice, lemongrass juice, a little salt and pepper for about 15 minutes. Then bring the beef to the pan, cut the meat into long strands.
Carrots are washed, thinly sliced, and cut into long strips. Onions are washed, peeled and thinly sliced. Bean sprouts washed and dried. Marinate carrots, onions, and bean sprouts with a little seasoning and pepper. Put a pan on the stove, add 1 tablespoon of cooking oil, add onions, carrots, and bean sprouts and stir-fry.
Lettuce, herbs washed, drained. Place lettuce, herbs, onion, bean sprouts, sautéed carrots, beef on top of the noodle and roll it up tightly. Do this until all the ingredients are gone.

How to make shrimp noodle rolls
- 200g shrimp
- 1 teaspoon minced shallot
- Lettuce, coriander, cucumber
- Phở noodles
- Seasoning: seasoning, pepper, soy sauce, oyster sauce, cooking oil
Shrimp washed, peeled, peeled, drained, marinated with ½ teaspoon seasoning, ¼ teaspoon pepper, 1 teaspoon soy sauce, 1 teaspoon oyster sauce, 1 teaspoon minced shallot, Mix well to infuse seasoning, let marinate for about 30 minutes. Then bring to the pan to cook shrimp evenly.

How to make vegetarian noodle soup
- 50g roasted peanuts
- 50g roasted sesame
- 50g chives, chopped
- 150ml fresh milk
- 40g jaggery
- 50g red bell pepper
- 50g yellow bell pepper
- 50g white reishi mushroom
- 50g carrots
- 50g brown reishi mushroom
- 50g tofu ky
- Phở noodles
- Seasoning: vegetarian seasoning, salt, chili sauce, pepper.
Make vegetarian noodle soup: Put 50g of roasted peanuts, 50g of roasted sesame in a blender along with a little water. Put a pan on the stove, add 2 tablespoons of cooking oil, pour 30g of chives into the pan and fry until fragrant and golden. Next, pour into the pan 150ml of fresh milk, 40g of jaggery, 3g of vegetarian seasoning, 1g of salt, 30g of chili sauce, sesame and ground peanuts above, stir well and bring the mixture to a boil.
Red and yellow bell peppers are washed and cut into long strips. White and brown Ganoderma lucidum washed, drained. Carrots are washed and cut. Heat a pan on the stove, add 1 tablespoon of oil. When the oil is hot, add 20g of persimmon into the pan, add bell peppers, mushrooms, carrots, tofu, and stir-fry until just cooked. You also add 2g of vegetarian seasoning, 2g of pepper.
Lettuce, herbs washed, drained. Spread pho noodles, turn lettuce, herbs, and sautéed vegetables on top, roll tightly. Keep doing this until all the ingredients are ready. Vegetarian noodle soup will be served with peanut sauce, roasted sesame above.

Mix dipping sauce to serve with pho roll
- 1 kohlrabi
- 1 dangerous chili
- 1 tablespoon minced garlic
- Condiments: vinegar, salt, sugar, monosodium glutamate, fish sauce, chili sauce.
Put 90g sugar, 360ml water, 45ml fish sauce, 45ml vinegar, 35g chili sauce in a large bowl, stir well.
How to make pickles: remove the shell, cut into squares about 1.5cm long and about 0.2 – 0.3cm thick. Carrots are also cut into small pieces the size of kohlrabi. Put kohlrabi and carrots in a large bowl and marinate with 1 teaspoon of salt for about 3-5 minutes, then wash them 4-5 times, gently squeeze to drain. Next, you put the carrots, kohlrabi in a large bowl and season with 3 tablespoons of sugar, 3 tablespoons of vinegar, ½ teaspoon of salt, 1 sliced chili, 1 tablespoon of minced garlic, mix it all up. Let it soak for about 7-10 minutes to use.
When eating, you dip pho rolls with fish sauce mixed on top with pickles.
