Ingredients to make chicken noodle soup for 4 people:
-500g chicken (Just take the chicken and cut into long and thin pieces)
-16 cups of water
– 16 cloves of peeled garlic, minced (about ½ cup)
-1 medium sized onion, cut in quarter
-3 ½ cup of TAKY wheat flour, add 1/3 cup to rub on noodle maker
– ½ cup of potato powder
– 1 small courgette/zucchini, cut into thin and small pieces
– 2 cloves of scallion, cut into small pieces
– Cooking oil
– Sesame oil
– Fish sauce
– Black pepper
How to cook chicken noodle soup:
You start with the broth: Prepare a large pot of water with chicken, garlic, onions and boil for about 1 hour on high heat.
– While waiting for the water to boil, you make the flour to make Pho.
– Mix wheat flour with potato powder, 1 teaspoon of salt, 2 tablespoons of cooking oil and 1 ¼ cup of water in a large bowl.
– Use a wooden spoon to mix the flour well and knead it with your hands until it is smooth. Put the flour in an airtight bag, wrap it and place it in the refrigerator or kitchen table for about 10 minutes.
– Take the flour out for about 2-5 minutes and put it back in the refrigerator.
Bước 3: Preparing courgette/ zucchini:
– Mix the shredded zucchini with ¼ teaspoon of salt and set aside for 5-10 minutes.

– Make a garlic spice sauce: You add the boiled garlic to the bowl and beat it to make it crushed and pureed. Add 1 teaspoon salt, ½ teaspoon pepper, 2 tablespoons sesame oil and mix well.
– Take chicken mixed with garlic sauce to infuse and set aside.
Step 6: Making Pho:
– Remove the flour and knead for about 2 minutes until the flour is really soft. Divide the flour into 2 parts.
– You prepare a flat surface, sprinkle a little flour to prevent sticking. Roll the dough into a ball, then roll it to a thickness of 1-2mm.
– After rolling thinly, you sprinkle some flour on the surface and fold it into 3-4 times. Cut the dough into thin noodles and sprinkle with flour and stir to avoid sticking to the noodles.
– Repeat the above steps with the rest of dough.
Bước 7: Making soup
– Boil the broth again and add the noodles. Use a spoon to stir and then cover.
– Cook for 4-6 minutes until all the noodles float and bubbles form on the surface and then turn off the heat.
Finally, you scoop out the noodles and add the fried zucchini to the top with the chicken. Sprinkle more scallion and enjoy while it is still hot.
– Make a spicy sauce if you want: mix 2 tablespoons of chili powder with 2 teaspoons of sesame oil and add to the noodles while enjoying.

– You knead the dough and put it in the bag as above instructions will help make the dough softer and less effortless when you roll it.
