Traditional Raclette Recipe
This simple raclette recipe should be the first you try on your raclette grill or raclette melter. For 4 Persons.
- 8 small/medium potatoes
- 1.5 lb. Raclette Cheese
- Buendnerfleisch (cut in paper thin slices)
- 1 jar pickled gherkin cucumbers (cornichons)
- 1 jar pickled onions
- freshly ground pepper
- paprika
Wash potatoes and boil in a pot filled with salted water for about 20 min. Leave the skin on! Test with a knife if the potatoes are done. Keep warm until ready to use in an insulated potato bag. In the meantime remove the rind of the cheese and cut into 1/16″ thick slices using an adjustable wire slicer. Arrange gherkins, onions, and Buendnerfleisch on a platter and set aside until required. Turn raclette on to begin to heat up (allow for at least 5 minutes before using). For Raclette grills: Each guest takes a slice of cheese, places it in their pan and slides it under the raclette grill to melt. It takes approximately 2 minutes to melt to a creamy consistency and 3 minutes for a more crispier top. In the meantime take a potato, place onto your plate and cut it into a few pieces, remove the pan from under the grill once it’s reached its preferred consistency and hold the pan onto its side to scrape the cheese out, using your wooden spatula. For Raclette melter, each guest prepares potatoes and side dishes on their plates. When the cheese starts melting on the wheel, scrape the cheese onto the plate. Season to taste with freshly ground pepper and paprika.

Sally’s favorite Raclette combination
Cook the pork and potato slices on the grill top, when brown, put them in the pan, add a slice of tomato, and cover with cheese. Put under the heating element until melted. Enjoy with fresh ground pepper.
Jimmy’s favorite Raclette combination – Hawaiian
Put a slice of ham in the pan, add a slice of pineapple, cover with Raclette Cheese. Put under the heating element until melted. Also delicious with a slice of baguette bread.
Tucker’s favorite Raclette combination – “Raclette Pizza”

Appetizers and Side Dished
Cheese Toast
Lightly toast slices of French or Italian bread on the grill plate. Place into a raclette dish and sprinkle with white wine. Cover with a slice of cheese and slide the raclette dish under the grill. Cook for 5 to 6 minutes. While the cheese is melting, cook thin slices of bacon or ham, sliced mushrooms, or onion rings on the grill plate. Once the cheese is melted garnish with the prepared grilled items.
Grilled Potatoes
Slice small pre-boiled potatoes lengthwise, place in a raclette dish. Cover with a thin layer of cheese (or you can use spices), slide the raclette dish under grill plate until cheese has melted.
Quesadillas
Grill green or red peppers, mushrooms and onions on the grill top. Place a slice of mozzarella cheese in raclette dish and slide under grill plate until cheese has melted. Place a tortilla on the grill top and fill with grilled vegetables and melted cheese. Fold tortilla over and flip it so both sides are browned. Cut and serve. You can also add your favorite meat and try different types of cheeses.

- Sliced artisan bread
- Hamburger patties
- Onion slices
- Garlic slices
- Cheese slices (e.g. Emmentaler)
Mango ShrimpServes: 4
- 2 tsps green peppercorn or black peppercorn
- 10 oz shrimp
- 3 tbs oil
- 2 tbs lemon juice
- 1 small mango
- salt, sugar to taste
- ¼ cup sliced almonds
Crush peppercorns, combine shrimp, peppercorns, oil and lemon juice. Peel mango, cut fruit from pit, and dice finely. Add diced mango to shrimp and season mixture to taste with salt and sugar. Place a little shrimp-mango mixture and cover with Raclette Cheese in the raclette dishes and cook for about 8 minutes, adding sliced almonds toward the end. Optional: grill the shrimp on the grill top before placing in raclette dishes. Enjoy!

Honey-Mustard-Ham with RaspberriesServing: 4 people
- 1 lb ham, cubed in 1/2″ pieces
- 2 Tbs Dijon Mustard
- 1 Tbs honey
- 1/2 tsp cayenne pepper
- 1 garlic clove, pressed
- 5-6 oz. fresh raspberries
- 1/2 lb Raclette Cheese, sliced
Mix ham, mustard, honey, cayenne pepper, and garlic. Cover and marinate in the refrigerator for at least 30 minutes. Heat Raclette grill. Put ham cubes and raspberries in the pan, cover with cheese and place it under the heating element. When melted, slide onto your plate and enjoy. Serve with fresh baguette bread.
