How to cook Western sticky rice
Step 1: Prepare ingredients
– First, you wash the leaves, cut them into small pieces, and cook them with 2 liters of water, 50ml of white wine and ½ part of crushed star anise. Cook until the leaves turn purple, then turn off the stove. Divide glutinous rice into 2 equal parts and then soak 1 part in water for 6-7 hours.
– The pandan leaves are washed, cut into small pieces and then put in a cooking pot with 2 liters of water and the remaining amount of star anise. Cook until the pandan leaves turn green, then turn off the heat. Soak the remaining sticky rice with pandan leaf juice for a beautiful green color.
– Grated coconut you soak with hot water and then knead, squeeze and comb through a sieve to get coconut milk. Or you can put the coconut in a thin cloth and squeeze it vigorously.
– Green beans you soak in water for about 2 hours until the beans are soft, then you put your head in a steamer, steamed in water until soft. Then, you add ½ teaspoon of salt, 4 tablespoons of sugar to the green beans, mix well to infuse the beans with flavor.
Step 2: Cook sticky rice
– You boil the water in the steamer, then put the sticky rice soaked in jasmine leaves into the rice bowl, steam it until cooked. When the sticky rice has just bloomed, you add the coconut milk, sprinkle it all over the sticky rice and mix until the sticky rice is mixed with coconut milk for a greasy taste. Next, you add a little salt and sugar to the sticky rice, mix well, cover and steam for another 10 minutes until the sticky rice is soft. After that, remove the sticky rice to the plate.
– Next, you put water into the steamer, then put the sticky rice soaked in pandan leaves and steam until cooked. Cook until the sticky rice has just bloomed, then you add the remaining coconut milk like cooking sticky rice with leaves. Sprinkle some salt and sugar and mix well. Steam for another 10 minutes until the sticky rice is cooked, then put the sticky rice on the tray.
Step 3: Stir-fry sticky rice
Put the cooking oil in the pan, add the sticky rice leaves and stir-fry evenly. Continue to stir-fry until the sticky rice no longer sticks to the pan. Then, you add vanilla flavor or banana oil to the sticky rice, stir-fry well, then prepare to make the mold. Similarly, you add the sticky rice soaked in pandan leaves and stir-fry until the sticky rice does not stick to the pan, then add the vanilla flavor.
Step 4: Put the sticky rice into the mold
– You spread a thin layer of cooking oil on the tray or heat the food wrapper underneath the mold. Then add a layer of toasted sesame, then add pandan leaf sticky rice, use a spoon to press the sticky rice firmly so that the sticky rice spreads evenly throughout the mold and tightly.
– Next, you put the layer of steamed green beans on top to create the filling layer, then put the sticky rice layer on top, press firmly to make the sticky rice taste tight. Finally, you sprinkle more layers of roasted sesame and crushed peanuts on top, use your hands to press down so that the sesame and peanuts stick to the sticky rice.
